Stuffed mushrooms
with ricotta & sun-dried tomatoes

Large juicy portabello mushrooms stuffed with lush, creamy ricotta cheese, paired with a light, fresh prosecco – it’s an easy and very pleasurable combination. This dish even sports the colours of Italy, as well as a sense of Italian flavours. It’s also an ideal share dish and surprisingly rich too. Usually one large mushroom per person is enough for a satisfying starter.

Suggested match Dry non-vintage prosecco ideally from Veneto, Italy
Pairing style / cleansing
This is a classic example of ‘what grows together goes together’ with the Italian influence of the dish matching nicely with the Italian wine. A light easy-drinking non-vintage prosecco beautifully cleanses the palate after the richness of the ricotta. The potentially strong flavours of the onion, sun-dried tomato and parmesan are pleasantly restrained by the acidity of the wine.
Ingredients
200g (7oz) ricotta cheese,
preferably fresh and full-fat
50g (1¾oz) sun-dried tomatoes,
finely chopped
1 tablespoon fresh flat leaf parsley, finely chopped
4 large portabello mushrooms 
½ small red onion, finely diced
1 garlic clove, peeled
and minced
parmesan cheese,
coarsely grated
salt & pepper
Method
Preheat oven to 190°C/375°F. Mix ricotta, sun-dried tomatoes and finely chopped parsley in a bowl and put to one side.
Remove the stems of the mushrooms and finely chop. Gently fry with onion and garlic until just softened. Allow to cool slightly and then add to ricotta blend and mix fully.
Re-grease the same pan with a little bit of oil, to seal the mushrooms. Put on a high heat, add a few drops of water and place a large saucepan lid propped at an angle over the mushrooms to increase humidity and prevent drying while frying. Fry for about a minute each side.
Once sealed, place mushrooms in an oven dish on a layer of baking paper and heap with ricotta mix, until all mushrooms have a dome of the ricotta blend on top. Sprinkle with some parmesan.
Bake for 20–25 minutes or until tender. Transfer to a wire tray and top with some freshly chopped parsley, salt and pepper and a little bit more parmesan. Serve immediately.

About the Authors
David Stevens-Castro is a highly regarded wine expert originally from Chile. He has a degree in Agricultural Science, specialising in fruit and wine production, and extensive experience as a sommelier. Fran Flynn is an award-winning commercial photographer and graphic designer originally from Ireland.
Living together on the Gold Coast, in Australia, they have pooled their skills as a husband-and-wife team to publish a series of books and share their expertise in the things they love.

In life, you have to do what makes you happy. Be with ones that make you smile. Laugh as much as you breathe. Love as long as you are living. Every day is a new beginning – look to what it can do.

Sometimes our lives have to be shaken up a bit – moved around to put us where we need to be. Look ahead and always smile. You never know what a change it can make.

My Review

365 Affirmations to Smile was written to encourage and inspire you to smile every day, no matter your circumstances. It is designed to be used as daily inspirational reading. The paperback edition is set out in a diary format, with two affirmations/days to a page, along with space for you to record your own inspirations and thoughts - and maybe something that made you smile that day. 
A journal of this type should be something beautiful, something you look forward to visiting each day. Unfortunately, this is not that book. The presentation is less than desirable, being very bland and containing several spelling and punctuation errors. Some illustrations or images would add a nice touch. In addition, maybe some note pages, ideas for further study, and words of encouragement could be added at the end.
While the affirmations are mostly good, they get a bit repetitive, with many on the same theme in close proximity to each other; perhaps they could be distributed more evenly throughout the year. Themes covered include: laughing, smiling, loving, not putting things off until later, believing in yourself, having courage, standing up for your beliefs, forgiveness, helping others, faith, hope, gratitude, motivation, and persistence.
A nice gift idea for someone who may be in need of a daily pick-me-up.

I am from Midwest City, Oklahoma, which is the heart of a large Military Base and a town committed to Friday night football. After graduating I married, raised a family and working in the family business several years juggling many responsibilities. I’ve always been one to journal my thoughts as an escape to a hectic day or to remind myself of all I am capable of achieving. In a world with so much negativity, my passion is to inspire positive thoughts one thought at a time and my hope is that I can inspire you! This has been an incredible journey and one I’m not finished writing.

Description
We have all heard the song "The Twelve Days of Christmas", and we have all seen the traditional Christmas crèche. Now, author Sam Beeson and photographers Nina and Terral Cochran combine these two classic Christmas icons to create A Rare Nativity.
Upon reading the first lines of the book, it is clear the narrator holds a bitter grudge as he sends his enemy crude and discarded gifts: "On the first night of Christmas I gave my enemy a briar from a tanglewood tree. On the second night of Christmas I gave my enemy two broken eggs."
Night after night the gifts pile up shards of glass, rusty nails, gnarled twigs, and more. What the narrator s enemy decides to do with each of these odious gifts is nothing less than a Christmas miracle. The photographic creation of the rare nativity at the end of the book is both a work of art and a wonder to behold.

My Review

Count down the twelve nights of Christmas with this sobering picture book, featuring stark black-and-white photographs and simple text. But, be warned, this is not one for the children. A Rare Nativity is based on the gospel according to Matthew and the injunction to "love your enemy". What would you do if your enemy sent you twelve mean-spirited gifts as Christmas drew nearer? Would you turn the other cheek? The person in this book does and, in so doing, creates a gift of great beauty. But I won't spoil the surprise at the end of the book.
With its beautiful message of forgiveness, this is a true Christmas treat that will make an especially good gift for someone you have wronged throughout the year.

About the Author
Sam Beeson gives himself annual writing assignments. In 2005, he wrote a poem a day. In 2007, he wrote about his wife every day. In 2015, each day he wrote a handwritten letter to someone new. Sam teaches high school English and loves reading the journals of his ancestors.
