The author of Pasta Pro shares with us a recipe for making fresh pasta.

Fresh Pasta Recipe
Ok, we're getting started. This is a basic recipe for a pasta dough; I originally used it for lasagna, but it's easy to adapt it to any purpose you can imagine. Think of it is an artist's mannequin; you can bend it, twist it, and dress it up any way you want, just as long as you maintain the basic liquid to solid ratios.
3 cups all-purpose flour
2 eggs
3 tbsp water
1 tsp olive oil
1 tsp salt
Mix together eggs, water, oil, and salt and set aside. On a clean work surface lay make a mound or pile of the flour and put an indentation in the center of it (it should look a little like a volcano). Pour the egg mixture into the indentation and begin mixing with the tips of your fingers until all of the mixture is incorporated into the flour. Some flour may not want to incorporate, this is fine. Knead the dough for 10 minutes in any remaining flour before rolling out and placing in the refrigerator for 1 hour to rest. Cut into the desired shapes and bake or boil.
